Do the past editions have any practice sessions on gym or any other online judge if one just wanted to try it out?
There's lots of past olympiads in oj.uz, QOJ and Eolymp. There are also links here
I heard that CEOI will take place in Slovenia in summer this year.
I also heard that it will be in Slovenia, but some people told me it might be in Poland, so I'll wait until I have an official source

The full name is International Advanced Tournament in Informatics (IATI). It is mostly organized by Bulgarian authorities.
It's basically a bulgarian tournament that's used for determining our national teams. It's international and every country can join
